Astrology-based dishes may bring about optimal bliss. Depending on the planetary alignment, the Sun and the Moon, we can prepare delicious recipes to help the capriciousness of the Stars! Here are my recipes of the week stressing the importance of equilibrium in all aspects of life.
With the Sun in Libra, let us strive to do what must be done to correct any imbalances in our lives. Let us never blame others or rely on others to achieve that equilibrium, we must do it by ourselves for ourselves. This week we are going to use turmeric as it represents overcoming obstacles and achieving victory for a balanced life. In Ayurveda, this yellow and aromatic spice is considered to be one of the most purifying and it is associated with Jupiter, the planet of expansion! How wonderful is that?
2 tbsp olive oil
½ tsp minced garlic
1 cup quinoa
1 tbsp turmeric
2 cup chicken broth
1 bay leaf
2 sprigs thyme

In a saucepan, sauté the onion and garlic with 1 tbs of olive oil. Cook until wilted. Add the quinoa and turmeric, stir to coat. Add the broth, bay leaf, thyme, salt and pepper. Cover and bring to a boil. Simmer and cook for 20 minutes. Uncover and stir in the remaining olive oil. Toss gently to blend well. Remove bay leaf.
White Bean Hummus with Turmeric
2 tbs fresh lemon juice
½ tsp turmeric
¼ teaspoon ground cumin
salt black pepper
1 can cannellini beans, rinsed and drained
1 garlic clove, peeled
Combine all ingredients in a food processor or blender and make a smooth paste. Eat with toasted, warm bread or pita chips.
