The following recipe will be able to satisfy your palate as well as give you the joy of feeling at home wherever you are and whatever your sign might be, but specially the most mutable signs.
This recipe is great for Thanksgiving Day.
Artichoke Pancetta Mac & Cheese
3 1/2 cups Cheddar cheese
1 cup Grana Padano
2 frozen packages artichoke hearts
2 1/2 cups whole milk
1 cups sour cream
½ cup heavy cream
8 oz cream cheese
¼ pound pancetta
1 box farfalle (bow-tie) pasta
6 slices of whole wheat bread
Directions
Preheat the oven to 400 degreed F.
Cook the pancetta until crispy, remove and save.
Mix the milk, sour cream, and cream cheese and whisk till combined.
Add the Cheddar, the Grana Padano and mix.
Cook the pasta, strain, and add to the milk/cheese mixture. Mix well until creamy.
Thaw, train and chop the artichokes hearts. Add to the pasta mixture and mix well.
Add the pancetta and the fat of the pancetta and combine.
Pour pasta mixture into a large baking dish or individual bowls.
In a blender, chop the bread into small crumbs. Toss with olive oil and salt. Top pasta with the crumbs.
