Chocolate Cream Custard
2 cups dark chocolate chips
3 cups milk
1 cup heavy cream
4 egg yolks
10 tbs sugar
2 tbs espresso coffee
Using a small saucepan, bring the cream, coffee and milk to a soft boil, over medium low heat.As soon as it boils, remove from the stove.
In a medium separate bowl, beat the egg yolks with sugar until creamy. Add a little of the hot milk mixture into the beaten eggs.
Add the eggs and sugar mixture into the saucepan with the milk while continuously stirring.
Over low heat, stir with a wooden spoon, until it thickens. Add this mixture to the chocolate morsels. Let sit for a minute and then stir until all is fully dissolved. A luscious cream will form.
Pour this mixture into 4 to 6 dessert dishes and let cool. Place in the refrigerator for at least two hours. Serve alone, with ice cream or whipped cream.
