My tortilla soup will be comforting and help you to ponder about your life. Prepare it and cherish every bite as you find yourself immersed in flavor. Comforting Tortilla Soup
- ¼ lb. soft tortillas
- 4 large tomatoes, chopped
- 1 clove of garlic
- 1 pinch of marjoram
- ½ cup grated pepper jack cheese
- 1 cup pork rinds
- 2 ancho chiles
- ¼ cup of table cream
- 1 avocado, sliced
- 1 tablespoon chicken broth
- vegetable oil
In a large pot and over high heat, cook the tomatoes in water for 5 minutes. Remove from the heat. Using a blender, liquify the tomatoes together with the garlic and marjoram. Pour in the pot once again, add chicken broth and bring to a boil.
Cut the tortillas into squares and fry them in vegetable oil until golden.
Remove the seeds from the ancho chile peppers and sauté in a pan with a little bit of oil.
Serve the tortillas at the bottom of a soup bowl and add the hot tomato mixture. Garnish with the cheese, cream, sautéed ancho chile peppers, pork rinds and avocado.
