Are you happy with what you have? This is not the time to look back, think of what ifs or regret anything; just open your eyes and look around. You should feel grateful for what you have and for what is coming your way.
Knowing what is coming your way is important, but even more important is to know where you are because what is coming will need your full attention and unconditional dedication.
It is preferable to walk on the right path, albeit limping, because you will eventually get to your destination; those who go running on the wrong path, only move farther from the goal. My tortilla soup will be comforting and help you to ponder about your life. Prepare it and cherish every bite as you find yourself immersed in flavor.
Comforting Tortilla Soup
In a large pot and over high heat, cook the tomatoes in water for 5 minutes. Remove from the heat. Using a blender, liquify the tomatoes together with the garlic and marjoram. Pour in the pot once again, add chicken broth and bring to a boil.
Cut the tortillas into squares and fry them in vegetable oil until golden.
Remove the seeds from the ancho chile peppers and sauté in a pan with a little bit of oil.
Serve the tortillas at the bottom of a soup bowl and add the hot tomato mixture. Garnish with the cheese, cream, sautéed ancho chile peppers, pork rinds and avocado.
