Autumn is officially here. Being one of my favorite times of the year, I will strive to enjoy the seasonal ingredients available as much as possible and I invite you to do the same. It also may be the time to put to work your imagination and create a fun atmosphere for your loved ones. Plan a get-together and have the intention of not rushing the time spent with your friends. In other words, invite them all to the kitchen and prepare my delicious spaghetti squash recipe as you all talk, mingle and ponder on the best moments of summer. Also, talk about any upcoming plans during the harvest season. The recipe below, besides being delicious, is the perfect way to bond as you will be cooking a pretty cool ingredient that is both, tasty and healthful.

Mediterranean Spaghetti Squash
2 lbs. spaghetti squash
2 boneless chicken breasts, cut into 1/2-inch cubes, skinless
1/2 cup chopped bell pepper
2 garlic cloves, minced
½ cup chopped red onion
1/4 teaspoon dried basil
⅛ teaspoon sea salt
1/8 teaspoon paprika
1 tablespoon olive oil
½ cup thawed artichoke hearts, drained
1/3 cup chopped pitted black olives
2 tablespoons crumbled manchego cheese
2 tablespoons parmesan cheese
Cut squash in half lengthwise and remove the seeds. Place squash on a microwave-safe plate with cut side facing down. Microwave on high for 20 minutes or until tender. Let cool. Using a pan, saute the chicken and the rest of the ingredients until nicely incorporated.
Gently, separate the squash strands using a fork. Serve the chicken mixture over the squash and enjoy.
