There is no better medicine than to head outdoors and be in contact with nature while having a delicious snack. My recipe, together with the radiant energy from the sun and the fresh air of the mountain, beach, camping or lake will do wonders for you.
Sweet Pumpkin Fritters
2 cups pumpkin puree
⅔ cups flour
1 egg + 1 yolk
1 tbsp butter at room temperature
⅓ cup brown sugar
pinch of salt
1 tsp pumpkin spice
1 teaspoon pure vanilla extract
1. Mix butter, sugar, egg yolk until creamy and soft. Add the pumpkin, spices, salt and mix well. Add flour, but do not mix much, just make sure it is well blended. 2. Use an ice cream scoop to measure the fritters and fry in hot canola or vegetable oil until golden.
3. I like to serve them covered in sugar or drizzled with sweetened condensed milk. You can also pour the condensed milk in a bowl for dipping.
