Here is a recipe that I love to make at this time of the year due to its simplicity and deliciousness. It tastes like the holidays but it also could be used to describe the reality of life. While there are some soft and creamy areas (the whipped cream) there are some rough, crunchy parts as well, like the pecans. The best way to enjoy it is not by separating one from the other, but by taking one bite at a time and enjoying it all at the same time.

Pumpkin Spice Semifreddo to Take Charge
1 cup heavy cream
1/3 cup pumpkin puree
1 tablespoon powdered sugar
1 teaspoon vanilla extract
1/4 teaspoon pumpkin spice
1/2 cup roasted pecans, chopped
Add heavy cream and sugar to a cold metal bowl and begin whisking it. Whisk it until it forms softs peaks.
Stir in vanilla and pumpkin spice and continue to whisk until the cream forms stiff peaks.
Gently fold in pumpkin puree with a spatula and the pecans.
Butter a loaf pan and line with parchment paper. Pour the mixture and place in freezer for at least 4 hours. Remove from pan, using the parchment paper to take it out. Slice and serve alone, drizzled with melted chocolate or a dab of whipped cream.
