The Ides of March, which indicates the half of the month, used to be a Roman holiday dedicated to Mars, the god of war. It was celebrated with a large military parade and with a lot of splendor. This time I will celebrate it my way by making one of my favorite dishes. It is by no means a military parade but I bet you I could conquer the world if I were to serve this. Enjoy fellow Pisceans!

Shirred Eggs
1 teaspoon salted butter
2 teaspoons heavy whipping cream
2 large eggs
salt and freshly pepper
paprika
1 tablespoon Parmesan cheese
1 cup leftover mashed sweet potatoes
Preheat oven to 375°.
Coat a 6-oz. ramekin with butter. Add a few teaspoons of the sweet potato mash and cover the bottom to make a layer. Add the cheese.
Pour whipping cream into ramekin.
Crack eggs into ramekin, coaxing yolks toward the center, using a spoon if necessary.
Season eggs with salt and pepper.
Using a water bath, bake for 12 minutes. Sprinkle with paprika and enjoy.
