With the Sun now in Capricorn, a sense of practicality and prudence may be in the air. How about being a practical compassionate with those around you and more importantly, with yourself? The real question is, will you graduate with honors from the School of Life? 

Here is a simple recipe that will allow you to enjoy some of Capricorn's positive energy and share it with your loved ones. My spiced pecans are great for gifting, too. If you feel generous, put them in small bags and take them to your friends as you celebrate the fast approaching new year. Giving these away will plant the seeds for a prosperous new cycle, in every sense of the word. Remember to be good to yourself and receive the 2012 with some delicious sweetness.

Spiced Pecans for Prosperity

  • 1 teaspoon pumpkin spice
  • 1/2  cup packed light brown sugar
  • 2 tablespoons corn syrup
  • 4 tablespoons unsalted butter
  • 1 pound pecan halves
  • 1 teaspoon kosher salt

Line a half sheet pan with parchment paper and set aside. Preheat the oven to 350 degrees F.

In a medium sauce pan and over medium high heat, combine the sugar and the corn syrup. When it boils (it will start caramelizing) and the sugar is completely melted, add the butter and mix well. Then, add the pecans and the pumpkin spice mixture. Combine well and cook for 2 minutes while carefully folding the nuts until completely coated. The mixture will thicken.

Transfer the nuts to the prepared sheetpan and separate them with a fork or spatula. Sprinkle with a little salt. Bake for 8-10 minutes. Allow the nuts to cool completely before transferring to an airtight container for storage.
